I tried something new and prepped 8 meals for my freezer in 90 minutes.
- Meatloaf- Beef and Turkey
- Meatballs- Beef and Turkey
- Dirty Rice- Sauage and Turkey
- Taco meat- Beef and Turkey
Everything was raw. I cooked nothing. I added the vegetables and seasonings to the ground meat. I will add things like rice to the Dirty Rice and spaghetti sauce to the meatballs when I prepare the meal. Having the base prepared saves me so much prep time, as well as clean-up. I happily cleaned 4 bowls, measuring spoons/cups, and a vegetable chopper knowing that I will not have to do that 7 more times! I gathered all of the vegetables, meats, and seasonings before beginning. I used my Food Saver to vacuum out all the air and flatten for storage but you could also use Freezer zip top bags.

Note: I had 2- 2.5lb packages of ground turkey plus 1lb and 1 1/3lb ground beef.
Line up 4 bowls, each next to a card with a title and list of ingredients. Dice onions and separate between each bowl. Move onto mushrooms, bell pepper, and celery. Add eggs, then seasonings. Add one ingredient at a time to each of the 4 bowls; this will help you to not get lost. Return each item back to its home or move to the side after you add it to each bowl.
Meatloaf– Divide in half. Makes 2 loafs/5 servings each.
- 1lb ground beef
- 1 1/4lb ground turkey
- 1c onion, diced
- 8oz mushrooms, diced
- 2t garlic, minced
- 2 large eggs
- 3/4c panko breadcrumbs or 1 large piece of bread
- 1/4c milk
- 2T parsley
- 2t Dijon mustard
- 2t Worcestershire sauce
- 1/2t thyme
- 1/2t pepper
- 1/2t salt
Thaw and shape into a loaf pan lined with parchment paper. Bake at 350 degrees for 40-45 minutes or until 160° internal temperature.
Meatballs– Makes 32 meatballs
- 3/4lb ground beef
- 3/4lb ground turkey
- 1T garlic, minced
- 2 large eggs
- 1/2c panko
- 1/2c parmesan cheese, grated
- 2T dried parsley
- 1/4c milk
- 1/2t salt
- 1/2 pepper
Use a large cookie scoop to make the meatballs or a silicone mold (I use the Meatball Master by Shape + Store). Freeze and divide to store. Bake from frozen at 425° for 15 minutes or air fry at 400° for 10 minutes.
Dirty Rice– Divide in half. Serves 5 each.
- 1lb Italian or breakfast sausage
- 1 1/4lb ground turkey
- 2c onion, diced
- 8oz mushrooms, diced
- 2 bell peppers, diced
- 1c celery, diced
- 1T garlic, minced
- 2T dried parsley
- 1/2t salt
- 1/2t pepper
Thaw and cook in a large skillet until browned. Add 1c rice + 1c quinoa with 2.5c water. Mix, cover with lid, and simmer for 15-20 minutes.
Taco Meat– Divide in half
I used all of my leftover ground meat (1 3/4lb ground turkey + .6lb ground beef), 8oz diced mushrooms, and taco seasoning. I will cook with a can of diced tomatoes and use as needed.
